Baked Chicken Recipe

Hello everyone!

Yet another thing I really enjoy is cooking, so I have decided to share some of my "experiments" sometimes they work and sometimes they don't, but I will share both kinds with you all.

A few weeks ago I decided that I wanted a good baked chicken recipe, but I remembered that every time I made baked chicken in the past it was always dry (and no one likes dry chicken), so I was on an experimenting spree.

Oh man was it good too.  As you can see I cut up some squash and zucchini that I bought at the fresh market (and my my it was so fresh!) and some potatoes.   Anyway I think I cut up around 3 yellow squash, and 2 large zucchini and 3 medium red potatoes and put them in the bottom of the glass pan then I put 3 chicken breasts on the top, and a little bit of butter then I sprinkled the top with Weber's Roasted Garlic and Herb seasoning, some minced onions, and rosemary.  (Honestly can't tell you how much I put on there) Finally on the bottom I poured some chicken stock to keep some moisture in the chicken while it baked then I covered the top with foil and put it in the oven at something around 350 degrees for 30 to 40 minutes.


Trust me this is some really really moist chicken with some really tasty veggies!
