Corn Chowder Recipe
First off I know corn chowder is traditionally more of a summer recipe; however, I know the last thing I want when it is 90 degrees and humid is a hot soup. But now that it's a little cooler and much less humid this corn chowder was perfect!
First off you are just going to have to ignore the terrible pictures our kitchen in the house we are renting is terribly out of date and the lighting is bad. Just know you have been warned!
The first step of the process is to dice the potatoes, onion, and celery into small pieces. Melt the butter into a large pot and add in your potatoes since these will take the longest to cook. A few minutes later toss in the onion and celery. And a few minutes later pour in the two bags of frozen corn along with the chili powder, thyme, parsley, and garlic. Cook this mixture for about ten minutes or until the vegetables are tender.
After this add in the flour and stir to coat all the vegetables. Allow this to cook for a couple minutes so you won't taste raw flour in the finished soup.
Finally pour in the chicken broth and milk bring to a boil and reduce to a simmer. Simmer for 20 minutes to thicken and allow all the flavors to come together. Salt and pepper to taste. Finally serve with your favorite sandwich. The one I made was a grilled cheese with big slices of tomato.
Corn Chowder Recipe
- 2 sticks of butter
- 2 bags of frozen corn
- 2 stalks of celery small dice
- 1 medium onion small dice
- 2 potatoes skin on small dice
- 1 cup flour
- 1 quart chicken broth
- 2 cups milk
- 1 teaspoon chili powder
- 1 1/2 teaspoon thyme
- 2 teaspoons fresh parsley
- 1 teaspoon garlic
- salt and pepper to taste
Melt 2 sticks of butter in a large pot then add in all vegetables with spices and herbs. Cook for ten minutes then add in the flour and stir well cook for a minute or two to cook out the flour taste. Pour in chicken broth and milk. Salt and pepper to taste. Turn the heat down and simmer for twenty to thirty minutes until potatoes are tender. Serve with your favorite sandwich
